Refrigerator Fresh Pickles (Not Shelf Stable)

I love this time of year! We are done with the cold weather and it’s not yet so hot that we can’t enjoy it! Everything is growing so fast thanks to the all the rain we’ve had and the star of the show…drum roll….CUCUMBERS! Oh my the joy they bring! Every day, I’m blessed with more! They just pop up overnight. My beautiful neighbor Beverly shared one of her favorite pickle recipes and oh my they’re so good. Enjoy!

REFRIGERATOR FRESH PICKLES (NOT SHELF STABLE)

Makes 1 quart jar / I use wide mouth or used pickle jars

4 – 5 medium pickling cucumbers / washed & sliced longways or crossways or however you like. Do not peel.

1 scant to level tablespoon canning salt – do not heap

1 tablespoon sugar – my hubs likes sweet pickles so I use 2 -3 T.

1/2 teaspoon crab/shrimp boil – trust me – 1/2 tsp will be pretty spicy – add more if you like but it can be salty – I use Zatarains

1 clove fresh peeled garlic – slit

1 /2 fresh jalapeño / de-seed if you wish

Sprig of fresh dill if you have it (Dried is ok)




1 tablespoon pickling spice

Pack the cucumber slices tightly into the jar along with the remaining ingredients – might have to push the garlic and peppers down with an object.

Pour 1/2 cup white vinegar over the cucumbers (typically 1/2 cup will be half if the jar is packed tightly.)

Fill jar with water to cover everything, put lid on tight and shake shake shake to dissolve the sugar and salt. I put a date on mine at this time. Store in the frig and shake every day for about 5 days. Ready to eat in a week (if you can wait that long!).

It’s good if you can make about 2 jars at a time. They will keep in the frig several days / weeks.
